Baby ginger is a whole different beast from the tough skinned fibrous bulbs you typically get in stores. The ginger we grow is just 6-7 months old and has a milder flavor, juicy, with a tender skin you don’t have to peel. It is great in stir fry and soups and any dish you want that zing of ginger flavor. Add it to smoothies or make a tea. Baby ginger has 2 or 3 times the antioxidants and polyphenols than mature ginger so the health benefits are much higher.
But baby ginger does not keep for a long time like the hardened mature ginger. Many people will store washed baby ginger by freezing for use in cooking and teas until the next crop is ready.
Another great way to preserve ginger is by pickling. A simple pickle will last in your refrigerator for many weeks. For longer term preservation, making crystalized ginger is a fun alternative and with the holiday season coming up, it can be great to add to cookies and other baked goods or just to give as gifts. In the process of making crystalized ginger, you also get a great by-product… ginger syrup that can be a great addition to teas, cereals, drizzled over ice cream… made into your own ginger ale…..
But, the processes can seem daunting until you have done it…. and sometimes it is just easier to do it with someone else that first time! So, we are offering this little workshop to get help get you over that hump and see some of the fun extra things you can do with ginger!
Together we will make crystalized ginger and ginger syrup. Participants can sample crystalized ginger made with sugar, honey or maple syrup. We’ll also make a refreshing, palate-cleansing ginger in vinegar. Everyone gets to taste or take home some of what we make together. In addition, everyone takes home 2 pounds of fresh Luna Bleu organic baby ginger and a full set of recipes to continue the fun with ginger in their own homes with the tastes that liked best.
